Chocolate chip cookies

There is no bad time to make a cookie.  

The trick is, buy good chocolate chips and put the dough in the freezer.  It only took me 40 years to figure it out.  

1 cup all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

Mix the dry together.

1 stick unsalted butter at room temp

fill a half cup measure about 2/3's full of brown sugar.  Fill the rest of the way with white sugar.

Beat the sugar and butter together until uniform, and add an egg.  Mix well.  Add 1/2 teaspoon pure vanilla extract.  Combine the wet with the dry ingredients just til mixed and then add 1 12 oz. bag of semi sweet best quality chocolate chips.  Guittard or Ghiardelli are good.  I mix them in with my hand.   Stick the batter in the freezer for about half an hour to 45 minutes.  It should be firm, but not so firm that you can't break bits off to put on the cookie sheet.  Preheat oven to 350.  Bake until just set.
